The little ones and i picked our first harvest of rhubarb today!
I am ever so happy. It seems like just last week it was only starting to show itself to the world, and now it is overflowing with delicious red stalks.
It grew very quickly with the recent spring rains and warm sunshiney days.
Now the yummy part! what to make with it.
The options are endless.
rhubarb Upside-Down cake....or Stewed rhubarb..
rhubarb Crisp....Sorbet?
Or i could cut it up and freeze it for another day......

I made a rhubarb loaf today - used a blueberry muffin recipe, subbed finely diced rhubarb for the blueberries, and baked it in a loaf pan... delish!
I'm working on a rhubarb-ginger semifreddo recipe - I'll let you know how it goes...

Last year I made strawberry & rhubarb mini pies. I working to improve my dough making skills for this year though. Im hoping to make some some rhubarb cofee cake when our rhubarb is ready.
